Figs, Family, and Fresh Flowers

Ok, so I may be going a little fig crazy since being back in NC, but in my defense, I haven’t had figs for 2 1/2 years and they just happen to be one of my favorite fruits! I’ve made fig yogurt bowls, fig pancakes with whipped lemon mascarpone, and honestly, I think I’ve eaten my weight in figs at this point. Still dreaming up new ways to use them—fig pizza, anyone? Fig salsa? Fig… shampoo? (Kidding. Maybe.)
On one of our many trips to Whole Foods since being back down south, I even found an amazing fig tree for only $14. Yes, you read that right. Fourteen dollars! The only catch: I’m still working on how to fit it in our RV for our final trip to South Carolina on Wednesday. For now, it’s sitting in front of Whole Foods, probably wondering if it’s ever going to find a forever home. I did try to convince my daughter to go get it—if I can’t enjoy it, someone in the family should!
Speaking of my daughter, I’m convinced she inherited my dad’s green thumb. She has the most beautiful basil I’ve ever seen and the most adorable little flower field. She even shared some of those flowers with me, and let me tell you, they have truly brightened up RV life! Note to self: always have a bouquet of fresh flowers, no matter how small the space. It’s like instant happiness in a vase.
Sharing is caring, so here’s my current obsession: the fig + blueberry yogurt bowl. If you don’t have access to figs (my heart goes out to you right now), you can substitute any fresh fruit and it will still be amazing!
Fig + Blueberry Yogurt Bowl
1 cup organic Greek yogurt
3-4 fresh figs, sliced
1/2 cup fresh blueberries
Drizzle of honey or maple syrup
Sprinkle of granola (recipe here)
Optional (but so nutritious!) sprinkle of bee pollen
Optional: a few mint leaves for fanciness
Instructions: Layer yogurt in a bowl, top with figs and blueberries, drizzle with honey, sprinkle with granola, and add mint if you’re feeling extra. Eat and pretend you’re in a fancy café.
On another note, we got to have a picnic in the park with family, which was really wonderful! It was kind of an impromptu thing, so I didn’t get to make anything special, but honestly, the time we had together was the most precious part. Our time here is closing in and we’ll be leaving in just a few days, but for now, we’re just soaking up every moment.
Looking forward to a girls’ day tomorrow with our daughter and granddaughters! Today, my Something Good is that I found my very favorite author on Substack and subscribed to his daily devotional. Such a great way to start the day on a positive note!
