A Chocolate Chip Cookie Kind of Day

Cookies, Chaos, and a Little Bit of Sunshine

Today was one of those days that felt like wading through molasses—slow, a little discouraging, but not without its silver linings! The morning started off with an employee situation that had me questioning our life choices (whoever said being your own boss was glamorous clearly never had to deal entitled employees). We ended up parting ways, and honestly, it was overdue.

As for Whittle Bird’s future, we’re still in “wait and see” mode. No big updates yet, but we’ve got a couple of meetings lined up in the next few days. Fingers crossed for some good news!

On a much tastier note, I baked my very first batch of cookies in our RV today. It was just that kind of day—chocolate chip cookies to the rescue! Chris was wrapping up a three-day fast (which I did not join, thank you very much). I know fasting is supposed to be great for you, but my personal record is a whopping 12 hours. I guess I’m just not built for it!

To celebrate the end of Chris’s fast, I whipped up some salsa Verde chicken and rice—one of my favorite quick and light meals. I’ll definitely share the recipe soon. After that, I got a little adventurous and tried out a new chocolate chip cookie recipe, aiming for a refined sugar-free version of our favorite Whittle Bird chocolate chunk sea salt cookies. I played around with coconut sugar and, of course, browned the butter (the secret weapon!). The results? Pretty darn delicious, if I do say so myself. I will be sure and post more about this with the full recipe as soon as life calms down a bit!

There’s something so satisfying about baking just for fun, with zero pressure. Before Whittle Bird, and even in our early days, I used to mill my own flour. Life got busy and the grain mill gathered dust, but I’m thinking it’s time for a comeback! I know a lot of you have asked about flour milling, so I’ll be sharing more about that soon—plus some of my favorite recipes using fresh flour.

Now, for my “something good” today: I got the sweetest photos of my grand kids at the beach. Their sandy smiles and pure joy were the highlight of my day. I can’t wait to hug them in person again—hopefully soon!
